Cheddar Cheese Soup

Ingredients
- 1/2 c. margarine
- 1 c. finely chopped onion
- 1 c. finely chopped carrots
- 1 c. finely chopped celery
- 1 c. flour
- 1 qt. chicken stock
- 1 qt. milk
- 3 c. grated Cheddar cheese
- 1 tsp. salt
- 1/2 tsp. white pepper
- 1 c. diced, cooked ham
Directions

1Saute vegetables in margarine until soft.

2Add flour and mix until smooth.

3Add chicken stock.

4Bring to a boil.

5Reduce heat and simmer for 15 minutes.

6Add cheese and ham.

7Cook 10 minutes longer.

8Add milk, salt and pepper.

9Heat to serving temperature. Makes approximately 2 quarts.
