- 8 oz. Swiss cheese
- 2 Tbsp. flour
- 1 green onion, sliced
- 2 firm tomatoes, sliced
- 1 tsp. chopped basil
- 2 eggs
- 2/3 c. milk or cream
- 1 (9-inch) pie shell
- 2 Tbsp. butter
Directions

1Grate cheese and toss with flour.

2Saute onion in butter until golden.

3Spread approximately 1/2 of cheese over bottom of pie shell, then spread onion over cheese.

4In butter left in pan, heat tomatoes with basil for two minutes.

5Arrange tomato slices over onion, then cover with remaining cheese.

6Beat eggs with milk or cream and pour over cheese.

7Bake at 350° for 35 to 40 minutes or until firm.
