  • 8 oz. Swiss cheese
  • 2 Tbsp. flour
  • 1 green onion, sliced
  • 2 firm tomatoes, sliced
  • 1 tsp. chopped basil
  • 2 eggs
  • 2/3 c. milk or cream
  • 1 (9-inch) pie shell
  • 2 Tbsp. butter

Directions

    Grate cheese and toss with flour.

    Saute onion in butter until golden.

    Spread approximately 1/2 of cheese over bottom of pie shell, then spread onion over cheese.

    In butter left in pan, heat tomatoes with basil for two minutes.

    Arrange tomato slices over onion, then cover with remaining cheese.

    Beat eggs with milk or cream and pour over cheese.

    Bake at 350° for 35 to 40 minutes or until firm.
