- 3 12 tablespoons butter
- 4 tablespoons flour
- 1 12 cups milk
- 6 egg yolks
- 8 egg whites
- 1 pinch salt
- 18 teaspoon cream of tartar
- 1 cup grated cheese (any kind)
- 1 teaspoon prepared mustard
- 1 pinch nutmeg
- 1 dash cayenne pepper
Directions

1Preheat oven to 400 degrees.

2Melt the butter and add the flour.

3Stir in the milk gradually.

4Remove the pan from the heat and add the egg yolks one at a time.

5Stir in the cheese, mustard, nutmeg and pepper.

6Add a pinch of salt and 1/8 teaspoons cream of tarter to the egg whites and beat until stiff.

7Fold the cheese mixture into the egg whites and transfer to the prepared souffle dish.

8Place the souffle in the oven and immediately reduce the heat to 375 degrees.

9Bake 25 Minutes.
