Cheesy Beef Corn Bread

  • 1 Tbsp. yellow corn meal
  • 1/2 lb. ground beef
  • 1 c. yellow corn meal
  • 1 tsp. salt
  • 1 c. milk
  • 1/2 tsp. soda
  • 1 c. milk
  • 1 (16 oz.) can cream-style corn
  • 2 eggs, beaten
  • 1/4 c. vegetable oil
  • 2 c. hoop cheese, shredded
  • 1 large onion, chopped
  • 2 to 4 jalapeno peppers, seeded and chopped

    Sprinkle 1 tablespoon corn meal in bottom of a 10-inch skillet (well-greased). Cook over medium heat until corn meal is slightly browned.

    Combine corn meal, salt and soda.

    Mix well. Add milk, corn, eggs and oil.

    Mix well.

    Pour 1/2 batter into skillet; sprinkle with cheese, onion, peppers and ground beef.

    Top with remaining batter.

    Bake in a 350° oven for 50 to 55 minutes. Makes 6 servings.
