Ingredients
- 3 eggs
- 13 cup superfine sugar
- 4 tablespoons flour
- 6 ounces cream or 6 ounces creme fraiche
- 3 ounces milk
- 1 teaspoon lemon peel, grated
- 1 pinch salt
- 1 -2 tablespoon brandy (optional)
- 1 cup sweet cherries, pitted (fresh or drained canned)
- 1 tablespoon butter, for greasing the pan
Directions

1Preheat the oven to 350F or 180C.

2Place the eggs and sugar in a large bowl and mix together.

3Sift the flour into the egg mixture and whisk well.

4Stir in cream (or creme fraiche), milk, zest, salt and brandy.

5Rest for 10 minutes.

6Lightly butter a large baking dish and sprinkle with sugar to coat.

7Scatter the cherries in the dish, then pour in the batter.

8Bake for 20-30 minutes, until it is light brown and firm in the middle.

9Remove from the oven and allow to cool a little before serving.
