Ingredients: 1/2 c. shortening; 1 tsp. lemon extract; 1 1/4 c. sugar; 2 eggs, separate; 2 c. flour; 2 1/2 tsp. baking powder; 1/2 tsp. salt; 1/3 c. milk; 1 jar (5 oz.) maraschino cherries, drained and chopped, reserve juice; 1/3 c. cherry juice; 1/2 c. nuts

1 tsp. lemon extract
1 1/4 c. sugar
2 eggs, separate
2 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
1/3 c. milk
1 jar (5 oz.) maraschino cherries, drained and chopped, reserve juice
1/3 c. cherry juice
1/2 c. nuts

Cream together shortening and lemon extract, add sugar and beat until fluffy.

Add egg yolks and beat well after each addition.

Sift together dry ingredients 2 times.

Add liquids and dry ingredients alternately to creamed mixture, beating only until smooth after each addition.

Stir in nuts and cherries.

Fold in stiffly beaten egg whites.

Bake at 375° for 25 minutes.
