- 1 (16 oz.) can tart cherries
- 1/2 c. sugar
- 7 tsp. cornstarch
- 1 Tbsp. butter
- 1/2 tsp. salt (optional)
- 1/8 tsp. almond extract (optional)
- red food coloring (optional)
- 8-inch double pie crust
Directions

1Drain cherry juice into saucepan.

2Add sugar, cornstarch, butter, salt, almond extract and coloring.

3Cook, stirring constantly, until thick and clear.

4Remove from heat.

5Stir in cherries.

6Pour into unbaked bottom crust and top with lattice top crust.

7Bake 10 minutes in a preheated 425° oven, then at 375°, bake for 25 to 35 minutes until golden brown.
