  • 1 (16 oz.) can tart cherries
  • 1/2 c. sugar
  • 7 tsp. cornstarch
  • 1 Tbsp. butter
  • 1/2 tsp. salt (optional)
  • 1/8 tsp. almond extract (optional)
  • red food coloring (optional)
  • 8-inch double pie crust

Directions

    Drain cherry juice into saucepan.

    Add sugar, cornstarch, butter, salt, almond extract and coloring.

    Cook, stirring constantly, until thick and clear.

    Remove from heat.

    Stir in cherries.

    Pour into unbaked bottom crust and top with lattice top crust.

    Bake 10 minutes in a preheated 425° oven, then at 375°, bake for 25 to 35 minutes until golden brown.
