- 2 (16 oz.) cans pitted tart red cherries
- 1 c. sugar
- 1/4 c. cornstarch
- 1 Tbsp. butter
- 4 drops almond extract
- 1 pastry lined 9-inch pie shell
- 1 pastry for lattice top of pie
Directions

1Drain cherries; reserving 1 cup liquid.

2In a large saucepan, combine 3/4 cup of the sugar and the cornstarch.

3Stir in reserved cherry liquid.

4Cook over medium heat until thickened and bubbly, stirring constantly.

5Cook and stir for 2 more minutes.

6Remove from heat.

7Stir in remaining sugar, butter and almond extract; stir in cherries.

8Cool slightly.

9Transfer filling to a pastry lined 9-inch pie pan.

10Top with lattice crust.

11Cover edge with foil.

12Bake at 375° for 25 minutes.

13Crust should be golden. Makes 6 servings.
