- 4 servings hot Minute rice
- 1 1/2 c. chopped green peppers
- 3/4 c. thinly sliced onions
- 3 Tbsp. oil
- 1/4 c. cornstarch
- 2 c. chicken stock
- 3 Tbsp. soy sauce
- 2 c. slivered cooked chicken
Directions

1Prepare Minute rice as directed.

2Cook green peppers and onions in oil over low heat until tender, but not browned.

3Blend cornstarch with small amount of chicken stock.

4Add remaining stock and soy sauce.

5Gently stir chicken and stock into vegetables.

6Cook and stir until sauce is clear and thickened.
