- 1 lb. boneless chicken, skinned and cut into cubes
- 1 Tbsp. olive oil
- 1 onion, cut into chunks
- 1 (14 1/2 oz.) can Del Monte original recipe stewed tomatoes
- 1 (6 oz.) jar marinated artichoke hearts
- 1/4 tsp. rosemary, crushed
- 1/3 c. crumbled Feta cheese (optional)
Directions

1In skillet, brown meat in oil.

2Add onion and cook 2 minutes. Stir in tomatoes, marinade from artichokes and rosemary.

3Cook over medium heat 10 to 15 minutes or until thickened, stirring frequently.

4Stir in artichoke hearts.

5Heat through.

6Top with cheese.

7Garnish with chopped parsley, if desired.
