- 1/4 c. oil
- 1 1/2 to 2 lb. boneless chicken pieces
- 2 to 4 cloves garlic
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1 (28 oz.) can crushed tomatoes
- 1 (3 oz.) can sliced mushrooms (can use fresh)
- 1 large onion, sliced
- 1 to 3 green peppers, cut into strips (colored sweet peppers are great, too)
- 1/4 c. cooking sherry (optional)
Directions

1Heat oil in pan.

2Brown chicken in hot oil on all sides.

3Set aside and continue cooking until all pieces are done.

4As last of chicken browns, add remaining ingredients.

5Cook slowly for 40 minutes or until the vegetables are tender.

6Add sherry, if desired.

7Serve with pasta and a salad.
