Chicken Cacciatore

Ingredients

  • 1/4 c. oil
  • 1 1/2 to 2 lb. boneless chicken pieces
  • 2 to 4 cloves garlic
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 1 (28 oz.) can crushed tomatoes
  • 1 (3 oz.) can sliced mushrooms (can use fresh)
  • 1 large onion, sliced
  • 1 to 3 green peppers, cut into strips (colored sweet peppers are great, too)
  • 1/4 c. cooking sherry (optional)

Directions

    Heat oil in pan.

    Brown chicken in hot oil on all sides.

    Set aside and continue cooking until all pieces are done.

    As last of chicken browns, add remaining ingredients.

    Cook slowly for 40 minutes or until the vegetables are tender.

    Add sherry, if desired.

    Serve with pasta and a salad.
