Chicken Cacciatore

  • 3 chicken breast halves, skinned and boned
  • 1/4 c. flour
  • 1 1/2 tsp. salt
  • 1 tsp. paprika
  • 1/2 tsp. white pepper
  • 1/3 c. salad oil
  • 1/2 c. onion, minced
  • 16 oz. can tomatoes, cut up
  • 6 oz. can tomato paste
  • 1 Tbsp. sugar
  • 1 clove garlic, minced

Directions

    Cut chicken into bite size pieces.

    Mix flour, salt, paprika and white pepper in bag.

    Shake pieces of chicken in bag to coat. Heat oil in large skillet over medium heat.

    Brown chicken in oil. When chicken is almost browned, add onion and cook 5 minutes longer.

    Add tomatoes, tomato paste, sugar and garlic.

    Reduce heat and simmer, covered, until tender, about 30 minutes.

    Add a little water if it becomes dry.

    Serve hot with cooked spaghetti. Serves 4.
