Ingredients
- 2 lb. frying chicken, cut up
- 2 Tbsp. butter
- 1 clove garlic, crushed
- 2 Tbsp. parsley, chopped
- 1/2 tsp. dried basil
- 1/4 tsp. pepper
- 3 Tbsp. olive oil or salad oil
- 1 1/2 c. sliced onion
- 1 c. Italian tomatoes (undiluted)
- 1 1/2 tsp. salt
- 1/2 c. red wine
Directions

1Wash chicken and pat dry with towel.

2Heat oil and butter in a Dutch oven.

3Add chicken, a few pieces at a time, and brown well on all sides.

4Remove browned chicken and set aside.

5Add onion and garlic to Dutch oven and saute until golden brown, about 5 minutes.

6Add remaining ingredients, mixing well.

7Make sure tomatoes are well mashed.

8Bring to a boil and reduce heat. Simmer, covered, for 45 minutes or until chicken is tender.
