Ingredients

  • 2 lb. frying chicken, cut up
  • 2 Tbsp. butter
  • 1 clove garlic, crushed
  • 2 Tbsp. parsley, chopped
  • 1/2 tsp. dried basil
  • 1/4 tsp. pepper
  • 3 Tbsp. olive oil or salad oil
  • 1 1/2 c. sliced onion
  • 1 c. Italian tomatoes (undiluted)
  • 1 1/2 tsp. salt
  • 1/2 c. red wine

Directions

    Wash chicken and pat dry with towel.

    Heat oil and butter in a Dutch oven.

    Add chicken, a few pieces at a time, and brown well on all sides.

    Remove browned chicken and set aside.

    Add onion and garlic to Dutch oven and saute until golden brown, about 5 minutes.

    Add remaining ingredients, mixing well.

    Make sure tomatoes are well mashed.

    Bring to a boil and reduce heat. Simmer, covered, for 45 minutes or until chicken is tender.
