- 1 12 lbs boneless skinless chicken breasts, cut into 1/2 inch strips
- 1 onion, sliced into rings
- 2 garlic cloves, minced
- 1 green pepper, julienned
- 2 tablespoons olive oil
- 1 (15 ounce) can tomato sauce
- 1 (14 1/2 ounce) can Italian stewed tomatoes
- 2 teaspoons garlic powder
- 12 teaspoon dried oregano
- 12 teaspoon salt
- 12 teaspoon pepper
- 2 cups rice, prepared
Directions

1In a skillet, cook the chicken, onion, garlic and green pepper in oil until chicken is lightly browned and vegetables are tender.

2Add tomato sauce, stewed tomatoes and seasonings.

3Bring to a simmer and cook, uncovered, for 5 minutes or until heated through.

4Serve over rice (or pasta if desired) and top with parmesaan if desired.
