- 1 medium onion, chopped
- 2 Tbsp. olive oil
- 1/3 c. wheat berries (get at natural food store)
- 2 tsp. curry powder
- 3 c. chicken broth
- 1 c. brown rice
- 16 oz. mixed vegetables (peas, corn, carrots and broccoli)
- 2 c. cubed chicken
Directions

1In a 3-quart Dutch oven, saute onion in oil.

2Add wheat berries and curry powder and saute 3 minutes.

3Add chicken broth. Bring to a boil; reduce heat.

4Cook, covered, for 20 minutes.

5Add rice.

6Bring back to boil.

7Reduce to simmer.
-
8Cook, covered, for 35 minutes.

9Stir in vegetables.
-
10Bake, covered, at 350° for 35 minutes.

11Bake, uncovered, for 5 minutes.
