  • 1 medium onion, chopped
  • 2 Tbsp. olive oil
  • 1/3 c. wheat berries (get at natural food store)
  • 2 tsp. curry powder
  • 3 c. chicken broth
  • 1 c. brown rice
  • 16 oz. mixed vegetables (peas, corn, carrots and broccoli)
  • 2 c. cubed chicken

    In a 3-quart Dutch oven, saute onion in oil.

    Add wheat berries and curry powder and saute 3 minutes.

    Add chicken broth. Bring to a boil; reduce heat.

    Cook, covered, for 20 minutes.

    Add rice.

    Bring back to boil.

    Reduce to simmer.

    Cook, covered, for 35 minutes.

    Stir in vegetables.

    Bake, covered, at 350° for 35 minutes.
