  • 2 Tbsp. vegetable oil
  • 2 medium onions, coarsely chopped
  • 4 garlic cloves, crushed
  • 3 carrots, coarsely chopped
  • 3 celery ribs, coarsely chopped
  • 1 (14 oz.) can Italian plum tomatoes with their juices
  • 2 c. cooked pinto beans
  • 3 c. cubed, cooked chicken
  • 1 (4 oz.) can chopped green chiles
  • 1/3 c. chili powder (mild or hot) to taste
  • 1 tsp. dried oregano
  • 2 tsp. ground cumin
  • 1 (12 oz.) bottle beer
  • 1 tsp. salt or to taste
