- 12 boned, skinned chicken breasts
- 1 c. butter
- 1/2 c. oil
- 6 large cloves garlic, minced
- 3 medium onions, chopped
- 1 c. chopped cilantro
- 1/2 c. lemon juice
- hot cooked rice
Directions

1Cut chicken into 1/4-inch pieces.

2In large skillet, melt butter.

3Add onions, garlic, cilantro and lemon.

4Saute until tender.

5Add cut chicken, salt and pepper to taste.

6Cook 5 minutes until chicken is cooked.

7Pour over 6 cups steamed rice. Serves 12.
