Ingredients
- 2 1/2 to 3 lb. skinned, cubed chicken
- 2 to 3 heaping Tbsp. curry powder
- 2 tsp. tomato paste
- 4 Tbsp. olive oil (vegetable oil)
- 1 bay leaf
- 2 large onions
- 3 large potatoes, peeled
- 1 tsp. minced garlic
- 1/2 tsp. chopped coriander or dried cilantro (optional)
- 1/2 tsp. ground cumin (optional)
Directions

1Heat onions and garlic in oil until lightly browned.

2Add curry paste (curry powder, tomato paste and water).

3Brown for 2 to 3 minutes; add chicken cubes and cook over medium heat for 10 to 15 minutes.

4If this mixture sticks, add 2 tablespoons of oil more. Season to taste.

5Simmer over medium heat for another 15 minutes. At this point, add cubed potatoes or any other vegetable with 1 to 1 1/2 cups of water.

6Simmer for another 30 minutes until the meat is cooked throughout and the vegetables are soft.

7Serve with rice. Serves 3 to 4 people.
