Chicken Divan

Ingredients

  • 1 whole chicken, cut up
  • 2 pkg. frozen broccoli spears
  • 2 cans cream of chicken soup
  • 1 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1/4 tsp. curry powder
  • 1/2 c. grated cheese and/or Pepperidge Farm stuffing crumbs

    Boil chicken until tender, 25 to 30 minutes.

    Skin and pull meat into chunky pieces.

    Cook broccoli according to package directions and drain.

    Grease a 9 x 13-inch baking dish.

    Place broccoli spears in bottom of pan in one layer.

    Scatter the chicken over the broccoli.

    Make a paste of the mayonnaise and soup (add some water), lemon juice and curry powder.

    Spread over chicken evenly.

    Sprinkle cheese (or preferred topping) on top of casserole.

    Bake at 350° for 30 minutes.
