  • 2 boneless skinless chicken breasts
  • 1 shallot, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon flour
  • 1 cup fresh mushrooms, sliced
  • 2 cups chicken stock
  • 1 cup marsala wine
  • salt and pepper, to taste
  • 1 teaspoon butter, cold

Directions

    Sprinkle chicken with salt and pepper.

    Add olive oil to pan, heat pan on medium heat.

    Add chicken skin side down to pan and brown, about 2 minutes each side.

    Remove chicken from pan.

    Add mushrooms to pan, sprinkle with salt and pepper, saute for 5 minutes.

    Add shallots and saute for 4-5 minutes.

    Sprinkle mushrooms with flour and saute an additional 5 minutes.

    Add wine to pan and reduce by about 1/3 to thicken sauce.

    Add chicken stock, simmer to reduce to thicken sauce.

    Add chicken to pan, reduce heat to low to allow for gentle simmer.

    Simmer chicken 5 minutes.

    Add parsley, stir to combine.
