  • 4 pieces skinned, boned and split chicken breast (about 1 lb.)
  • 3/4 c. plain bread crumbs
  • 1/4 tsp. dry basil
  • 1/4 tsp. dry oregano
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 egg, lightly beaten
  • olive oil
  • 1 1/3 c. spaghetti sauce, divided
  • 1/2 (8 oz.) pkg. Mozzarella cheese, thinly sliced
  • 3 Tbsp. grated Parmesan cheese

Directions

    Spread a chicken cutlet out flat between 2 pieces of waxed paper.

    Using a mallet or rolling pin, pound cutlet until it's 1/2 inch thick.

    Do the same with remaining cutlets.
