  • 1 4 pound whole chicken
  • 1/2 large onion
  • 1 carrot sliced
  • 2 celery stalks sliced
  • 4 tbsp chicken bouillon
  • 1 tbsp black pepper
  • 4 cup large elbow pasta
  • 1/2 large onion diced
  • 2 celery stalks diced
  • 1/2 bell pepper diced
  • 1 1/2 cup mayonnaise
  • 1/4 cup dijon mustard
  • 1/2 cup relish
  • 2 cup frozen corn thawed
  • 1 1/2 cup reserved liquid
  • 6 boiled eggs
  • 1 tsp oregano
  • 1 salt to taste
  • 1 paprika

Directions

    Put boiled chicken ingredients in large pot, cover with water, bring to boil, cover and simmer for 90 minutes, strain reserving liquid, place chicken in bowl, let cool, then shred meat.

    Bring reserved liquid back to boil, cook pasta according to package directions in the liquid, strain reserving liquid again.

    Dice 4 eggs.

    Put pasta, onion, celery, bell pepper, mayonnaise, mustard, relish, corn, a cup and a half of reserved liquid, diced eggs and oregano in large bowl, mix well, season with salt to suit your taste.

    Slice remaining two eggs and place on top of pasta, sprinkle lightly with paprika, chill for about 2 hours, enjoy!!!
