- 5 Tbsp. butter
- 1/3 c. flour
- 3 c. chicken broth
- 1/8 tsp. pepper
- 1/8 tsp. ground thyme
- salt to taste
- 4 c. cooked chicken, cut up
- 1 (10 oz.) pkg. frozen peas and carrots, cooked and drained
- 2 to 3 Tbsp. sherry (optional)
- 2 1/2 c. Bisquick
- 2/3 c. milk
Directions

1Melt butter in large pot.

2Stir in flour and cook over medium heat.

3Gradually add chicken broth, stirring constantly.

4Stir and simmer until it is gravy-thick.

5Add seasonings.

6Add chicken and vegetables and simmer until heated through.

7Stir in sherry.

8Pour into 2-quart casserole.

9Stir together Bisquick and milk to make manageable dough.

10Turn onto floured board and knead lightly until smooth.

11Roll out to a circle large enough to cover the top of casserole.

12Set dough on top of chicken mixture.

13Bake at 450° until golden brown, about 10 minutes.
