Chicken Quesadillas

  • 1 (12 oz.) can chicken breast, diced
  • 3/4 c. fat-free sour cream
  • 1/2 c. prepared salsa (hot or mild; your choice)
  • 1 c. reduced-fat Cheddar cheese, shredded
  • 2 Tbsp. fresh chopped cilantro
  • 6 to 8 fat-free flour tortillas

Directions

    Spread 1 side of each tortilla with 1 1/2 teaspoons of sour cream.

    Top 1/2 of tortillas with diced chicken; dot evenly with salsa, cheese and cilantro.

    Top with remaining sour cream; fold over.

    Place (sour cream side down) on microwave-safe plate and cook on High for 1 1/2 to 2 minutes, until cheese is melted and quesadillas are hot through and through.

    Repeat, then cut into 4 to 6 wedges.
