  • 1 pkg. (6 oz.) long grain wild rice
  • 1/4 c. butter
  • 1/3 c. chopped onion
  • 1/3 c. flour
  • 1 tsp. salt
  • dash of pepper
  • 1 c. half and half
  • 1 c. broth
  • 2 c. cooked chicken, chopped
  • 1 can (4 1/2 oz.) mushrooms
  • 1/3 c. chopped parsley or 1 tsp. dried parsley
  • 1/4 c. almonds

Directions

    Prepare rice to directions.

    Saute onions in butter until tender.

    Stir in flour, salt and pepper.

    Stir in half and half and broth until thick.

    Stir in chicken, mushrooms, parsley, almonds and cooked rice.

    Bake in casserole, uncovered, at 350° for 30 minutes.
