Chicken Tavern Style

Ingredients

  • 1 (3 1/2 to 5 lb.) chicken, cooked with onion, celery and salt, slice without skin
  • 1/2 c. flour
  • 1/2 c. butter
  • 1 c. evaporated milk
  • liquid from 2 (3 oz.) cans mushrooms (1/2 lb. fresh)
  • 1/2 tsp. turmeric
  • 1 tsp. salt
  • 1/4 tsp. oregano
  • 1/4 c. grated cheese (I use more)
  • 2 to 3 c. cooked rice

    Blend flour into butter.

    Add evaporated milk and liquid from mushrooms.

    Add chicken broth to make 4 cups of liquid.

    Add turmeric, salt and oregano to liquid.

    Cook until sauce is thickened.

    Add grated cheese.

    In flat baking dish, put 2 to 3 cups of cooked rice.

    Layer chicken and mushrooms over rice.

    Pour cream sauce on top and top with cheese.

    Bake 30 minutes at 350°.
