  • 1/2 chicken
  • salt
  • ground black pepper
  • vegetable oil
  • 1 carrot
  • 1 onion
  • 1/2 leek
  • 1 bell pepper
  • 1 tablespoon flour
  • 12 ounces beer
  • 200 milliliters chicken broth
  • thyme
  • dried rosemary

Directions

    Season the chicken with salt and pepper. Add a couple of tablespoons of oil to a skillet on medium-high heat. Fry until golden brown. Remove, drain on paper towels, and set aside.

    Add another tablespoon of oil to the skillet on medium heat. Add the carrot, onion, leek, and bell pepper.

    Add the flour and continue to cook. Once the flour has blended in, add the beer and cook for 1 minute on high heat, allowing the alcohol to evaporate.

    Add the fried chicken, broth, and a pinch each of thyme and rosemary. Simmer for 30 minutes and serve.
