Chicken With Lime Butter

Ingredients
- 6 to 8 split chicken breasts, skinned and boned
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 or less cooking oil
- 1 lime, juiced
- 6 Tbsp. butter
- 1 tsp. fresh chives, minced
- 1/2 tsp. dill weed
Directions

1Sprinkle chicken on both sides with salt and pepper.

2In large frying pan, place oil and heat to medium temperature.

3Add chicken; saute about 4 minutes, or until light brown.

4Turn chicken; cover and reduce heat to low.

5Cook for 10 minutes, or until fork can be inserted in chicken with ease.

6Remove chicken; drain off oil and discard.

7In same frying pan, add lime juice and cook over low heat until juice begins to bubble.

8Add butter, stirring until butter becomes opaque.

9Stir in chives and dill weed.

10Spoon over chicken.

11If chicken needs to be kept warm until meal is served, put back in pan with lime butter until ready to serve.
