Chicken With Peppers

  • 2 frying chickens, skinned and cut up
  • 1 small onion
  • 3/4 c. dry white wine
  • salt and pepper
  • noodles or pasta
  • 2 Tbsp. olive oil
  • 1 clove garlic, crushed
  • 4 green peppers, rinsed, seeded and cut in strips
  • 1 lb. ripe tomatoes, peeled, seeded and chopped

Directions

    Brown the chickens under the broiler.

    Place chicken in medium skillet.
  3. 3
    Add the onion, wine, salt and pepper.

    Cook until wine is reduced to half, then add the tomatoes.

    Saute for several minutes in saucepan the olive oil, garlic and green peppers.

    Add chicken; cook until chicken is fork-tender.

    Place in bed of noodles or pasta.
