- 1/2 to 1 lb. beef cubes
- 1 c. pinto or Amasazi beans
- 3 dried, deseeded hot chiles
- 4 dried tomato halves, chopped in 1/4-inch bits
- 1 tsp. chili powder
- 2 tsp. herb vinegar (such as thyme)
- 2 tsp. celery seed
- 1 tsp. thyme
- 1/2 can green chiles (mild, which is still hot)
- 1 pt. canned tomatoes
- 4 cloves garlic, crushed
- 1/2 c. chopped ancho chili (optional)
- 2 c. beef broth
Directions

1Coat the beef cubes with flour and braise in peanut oil.

2Cook the beans 1 1/2 hours and drain.

3Add all the other ingredients. Simmer until done.
