- 1 tablespoon olive oil
- 1 red onion, finely diced
- 500 g ground chicken
- 2 teaspoons minced garlic
- 2 teaspoons minced ginger
- 1 red capsicum, finely chopped
- 1 tablespoon fish sauce
- 2 tablespoons sweet chili sauce
- salt and pepper
- 2 tablespoons chopped coriander
Directions

1Heat oil in frypan.

2Add onion - cook 3 minutes till soft.

3Add chicken and garlic and ginger.

4Cook 7 minutes till browned.

5Break up lumps of mince with wooden spoon whilst cooking.

6Add capsicum and cook further 5 minutes.

7Add fish sauce and sweet chili sauce and season to taste.

8Stir in coriander.

9Serve with noodles or rice or toss through salad leaves.
