  • 3/4 lb. grated Cheddar cheese
  • 21 oz. whole green chilies, split and seeds removed
  • 2 heaping Tbsp. flour
  • salsa
  • 3/4 lb. Monterey Jack cheese
  • 6 large eggs
  • 1 small can evaporated milk
  • salt and pepper to taste

Directions

    Split chilies; remove seeds.

    Arrange chilies, Cheddar and Monterey Jack cheese in a 9 x 13-inch baking dish.

    Beat eggs, milk, salt and pepper; pour over chilies.

    Bake for 30 minutes at 350°.

    Remove from oven; top with salsa.

    Bake 10 minutes longer. Serve at once.
