- 3/4 lb. grated Cheddar cheese
- 21 oz. whole green chilies, split and seeds removed
- 2 heaping Tbsp. flour
- salsa
- 3/4 lb. Monterey Jack cheese
- 6 large eggs
- 1 small can evaporated milk
- salt and pepper to taste
Directions

1Split chilies; remove seeds.

2Arrange chilies, Cheddar and Monterey Jack cheese in a 9 x 13-inch baking dish.

3Beat eggs, milk, salt and pepper; pour over chilies.

4Bake for 30 minutes at 350°.

5Remove from oven; top with salsa.

6Bake 10 minutes longer. Serve at once.
