  • 2 c. margarine
  • 1 c. sugar
  • 2 c. flour
  • 3 c. Quaker oats (Quick or old fashion)
  • 1 Tbsp. grated lemon peel
  • 1 tsp. vanilla
  • powdered sugar

Directions

    Beat margarine and sugar until creamy.

    Add remaining ingredients, except powdered sugar.

    Mix well.

    Cover and chill for 30 minutes.

    Roll into 1-inch balls; flatten with powdered sugar dipped glass.

    Bake for 12 to 15 minutes at 350°.

    Cool 1 minute on cookie sheet.

    Remove to rack; sprinkle with powdered sugar, if desired.
