Chocolate Mousse(Serves 15)

- 8 eggs
- 2 (6 oz.) pkg. chocolate chips
- 10 Tbsp. butter (do not use margarine)
- 1 pt. real whipping cream
Directions

1Warm eggs to room temperature (at least 1 hour).

2Separate eggs.

3Melt chocolate and butter in double boiler, stirring constantly, as it has a tendency to become grainy or lumpy. Remove from heat and add egg yolks, one at a time.

4Mix until just smooth and let sit.

5Beat whites until very stiff.

6Fold into chocolate mixture using wire whisk, until very foamy and fluffy. Put this into the bowl you wish to serve it in and chill.

7Make this at least one day ahead, preferably 2 days.
