  • 1 12 cups rice milk
  • 3 tablespoons cornstarch
  • 14 cup cocoa powder
  • 14 cup maple syrup
  • 14 teaspoon vanilla extract or 14 teaspoon peppermint extract or 14 teaspoon coconut extract
  • whipped cream

Directions

    Combine all ingredients except for extract and whipped cream in a medium saucepan over medium heat.

    Whisk rapidly until mixture is smooth heating until pudding thickens.

    Stir in extract and mix well.

    Pour into individual dishes.

    Refrigerate until chilled.

    Serve with generous dollop of whipped cream.

    Note - Fee free to substitute soy milk for rice milk.
