- 1 12 cups rice milk
- 3 tablespoons cornstarch
- 14 cup cocoa powder
- 14 cup maple syrup
- 14 teaspoon vanilla extract or 14 teaspoon peppermint extract or 14 teaspoon coconut extract
- whipped cream
Directions

1Combine all ingredients except for extract and whipped cream in a medium saucepan over medium heat.

2Whisk rapidly until mixture is smooth heating until pudding thickens.

3Stir in extract and mix well.

4Pour into individual dishes.

5Refrigerate until chilled.

6Serve with generous dollop of whipped cream.

7Note - Fee free to substitute soy milk for rice milk.
