Ingredients

  • 2 qt. finely chopped cabbage
  • 1 qt. peeled, chopped green tomatoes
  • 6 medium onions, chopped
  • 6 green peppers, coarsely chopped
  • 6 red peppers, coarsely chopped
  • 1/4 c. pickling salt
  • 6 c. vinegar, divided
  • 2 Tbsp. prepared mustard
  • 2 1/2 c. sugar
  • 2 Tbsp. mustard seed
  • 1 Tbsp. mixed pickling spice
  • 1 1/2 tsp. turmeric
  • 1 tsp. ginger

    Combine vegetables and salt; stir well.

    Cover and let stand 8 hours.

    Drain well.

    Stir 2 tablespoons vinegar into mustard. Combine mustard, remaining vinegar and remaining 5 ingredients in a large kettle.

    Bring to a boil; reduce heat and simmer, uncovered, 20 minutes.

    Add vegetables.

    Simmer 10 minutes.
