Chunky Cod and Potato Soup

Ingredients
- 200 g or 6-7 oz. cod or other white fish
- 2 cloves garlic, smashed and cut in half
- 1/2 onion
- 3 small potatoes or 1 large
- 1/4 cup white wine
- 2 sprigs fresh thyme or 1/2 dry
- 1 cup water
- to taste Salt & pepper,
- 2 Tbsp chopped parsley
- 1 Tbsp olive oil or butter
Directions

1Prep the ingredients.

2Peel and slice the potatoes, cut onions into thin slices and chop the parsley.

3Peel and crush the garlic.

4Cut the cod into bite-sized chunks.

5In a medium pot, heat the oil or butter on medium.

6Add the garlic and lightly brown.

7Add the sliced onion and saute until very soft.

8Next add the sliced potatoes, cod, thyme and white wine.

9Bring the wine to a boil for 1-2 minutes.

10Add about 1 cup of water or enough to cover all ingredients.

11Bring to a boil again and skim off any of the foamy stuff that comes up.

12Turn heat to low and cover the pot tightly.

13Simmer for 15 minutes, until potatoes are soft.

14Once everything is cooked, add salt and pepper to taste, and stir in the chopped parsley.
