"Classic" Carrot Cake

  • 3 c. flour
  • 2 tsp. cinnamon
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 1 1/4 c. oil
  • 1 1/2 c. sugar
  • 4 eggs, lightly beaten
  • 2 c. mashed cooked carrots
  • 1 c. raisins
  • 1 c. chopped nuts

Directions

    Mix together all dry ingredients. Beat together eggs, oil and sugar. Add to dry ingredients. Mix in 2 cups cooked mashed carrots; add nuts and raisins. Bake at 350° for 1 hour in greased and floured large tube pan.
