- 2 cups self-raising flour
- 1/4 cup cocoa powder
- 1/2 cup caster sugar
- 2 cups Coco Pops cereal or 2 cups COCOA KRISPIES(R) cereal
- 100 g butter, melted
- 2 eggs, lightly beaten
- 1 cup buttermilk
- 1 teaspoon vanilla essence
Directions

1Preheat oven to 180.C.

2Grease 12 1/2 cup capacity muffins pans.

3Sift flour and cocoa into a large bowl, add sugar & 1 3/4 cups coco pops, stir well to combine.

4Combine butter, egg, buttermilk and vanilla in a jug and then add to dry ingredients, stir until just combined.

5Spoon mixture evenly into prepared muffins pans and sprinkle tops with remaining coco pops.

6Bake for 20 mins or until a skewer inserted comes out clean.
