- 2 1/2 c. milk
- 3 Tbsp. cornstarch
- 3 Tbsp. margarine
- 1/4 c. milk
- 3 egg yolks, save whites
- 1 c. sugar
- 1 c. coconut
- 1 tsp. vanilla
- cream of tartar
Directions

1Put milk in saucepan and add margarine.

2Cook until it boils. Meanwhile, mix cornstarch, sugar, egg yolks and 1/4 cup milk.

3When milk and margarine starts to boil, add cornstarch mixture.

4Stir until thickened.

5Add 1 cup coconut and vanilla.

6Pour into cooked pie crust.

7Add a pinch of cream of tartar to egg whites and beat until stiff.

8Add 3 tablespoons of sugar.

9Beat until whites stand in peaks.

10Add 1 teaspoon cornstarch.

11Pour onto pie and sprinkle with coconut.

12Cook until browned at 350°.
