- 2/3 cup sugar
- 1/2 teaspoon salt
- 2 1/2 tablespoons cornstarch
- 1 tablespoon flour
- 3 cups milk
- 3 egg yolks, beaten
- 2 tablespoons butter
- 1 1/2 teaspoons vanilla
- 1 cup sweetened flaked coconut
Directions

1Stir together sugar, salt, cornstarch and flour.

2Add milk, mix well and bring to a boil over medium heat.

3Boil for one minute, then pour some hot mix into egg yolks to temper, then add back to pudding mixture.

4Boil one minute more, then add butter, vanilla and coconut.

5Cool slightly, then pour into baked pie crust.

6Refrigerate several hours and serve with sweetened whipped cream and top with toasted coconut.
