  • 4 eggs, slightly beaten
  • 1/4 tsp. salt
  • 1/2 c. sugar
  • 2 1/2 c. milk, scalded
  • 1/2 tsp. vanilla
  • nutmeg
  • 9-inch pastry shell
  • 1 c. shredded coconut

Directions

    Combine eggs, salt and sugar.

    Add milk and vanilla.

    Pour into pastry shell and sprinkle with nutmeg.

    Cover top with coconut.

    Bake in very hot oven (450°) for 10 minutes.

    Reduce temperature to 325° and bake for 30 to 40 minutes or until a knife inserted comes out clean.
