- 3 ounces fat-free ricotta cheese
- 14 cup nonfat dry milk powder
- 5 tablespoons sugar
- 14 cup unsweetened dried shredded coconut
Directions

1Grease an 8x8 inch square pan, set aside.

2In a large, nonstick fry pan heat ricotta cheese on medium heat.

3Add milk powder and stir to mix thoroughly.

4Cook for 12 to 15 minutes until most of the liquid is evaporated.

5Stir frequently to avoid sticking or burning on the bottom.

6Add sugar and stir.

7The ricotta cheese mixture will become liquid again.

8Cook for another 5 minutes, stirring occasionally.

9Add the coconut and mix thoroughly.

10Continue to cook for 3 to 5 minutes.

11The mixture should be quite thick.

12Pour the mixture into the greased pan and press the mixture with a spatula.

13Cut into 1 x 1 inch diamond shapes.

14The mixture sets as it cools.

15Cool completely before removing from the pan.
