Coffee Tapioca Cream

Ingredients

  • 1 c. milk
  • 1 c. coffee (not decaf)
  • 1/3 c. Minute tapioca
  • 1/2 c. sugar
  • 1 egg, beaten
  • 1/2 tsp. vanilla
  • 1 c. whipped cream

Directions

    Put milk, coffee, tapioca, sugar and egg in double boiler and cook until it thickens.

    Remove from heat; add vanilla and let it cool.

    Before serving, add whipped cream, folding it into tapioca mixture.

    Mixture can be made the day before, but do not add cream until 3 to 4 hours before serving.
