- 1 c. milk
- 1 c. coffee (not decaf)
- 1/3 c. Minute tapioca
- 1/2 c. sugar
- 1 egg, beaten
- 1/2 tsp. vanilla
- 1 c. whipped cream
Directions

1Put milk, coffee, tapioca, sugar and egg in double boiler and cook until it thickens.

2Remove from heat; add vanilla and let it cool.

3Before serving, add whipped cream, folding it into tapioca mixture.

4Mixture can be made the day before, but do not add cream until 3 to 4 hours before serving.
