- 1 bunch fresh collard greens
- 1 medium piece salt pork
- 1 cup water
- 1 teaspoon salt
- 1 tablespoon bacon drippings, butter or margarine
- Pinch sugar (optional)
Directions

1Strip the stems from the greens (unless they are very tender) and wash thoroughly.

2Place the greens in a saucepan and add the pork, water, and salt.

3Cook, covered, for 45 minutes over medium heat or until tender.

4Remove the pork and pour the greens into a colander to drain.

5Place the greens in a pan and chop, scissor-like with 2 knives.

6If necessary, add more salt, to taste.

7Keep hot and add the bacon drippings and a pinch of sugar.
