Corn And Wild Rice Risotto

- 2 c. cooked wild rice
- 4 Tbsp. unsalted butter
- 1/2 c. diced onion
- 1/2 c. diced red bell pepper
- 1/2 c. diced yellow bell pepper
- 1 1/2 c. corn
- 2 c. chicken stock
- 1 c. heavy cream
- 1/2 c. grated Parmesan
- salt and pepper
Directions

1Melt unsalted butter and saute onion and red and yellow bell peppers.

2Add the corn and rice and then the cream.

3Stir well. Cook down a bit until slightly thickened.

4Add the Parmesan and season with salt and pepper just before serving.
