- 2 (10 ounce) packages frozen corn, thawed
- 1/4 cup sugar
- 1 1/4 teaspoons salt
- 4 large eggs
- 2 cups milk
- 1/4 cup butter, melted and cooled (1/2 stick)
- 1/4 cup fresh chives, chopped
- 3 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 1 pinch of grated nutmeg, fresh
Directions

1Preheat oven to 350°F.

2Butter a 1 1/2-quart baking dish.

3In a food processor, pulse 1 of the packages of corn until coarsely chopped, then transfer to a mixing bowl.

4Add the remaining package of corn and sprinkle with the sugar and salt; stir to combine.

5Whisk together the eggs, milk, butter, chives, flour, and vanilla and combine with the corn.

6Pour the mixture into the baking dish and sprinkle with nutmeg.

7Bake in the center of the oven until the center of the pudding is just set, about 45 minute.
