  • 1 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 eggs, well beaten
  • 1/4 c. milk
  • 1 Tbsp. butter
  • 1 can whole kernel corn, drained

Directions

    Sift together the flour, baking powder and salt.

    Combine eggs, milk and butter; add to flour mixture.

    Add corn.

    Drop by spoonful into hot fat (375°) for about 3 minutes.

    Makes 12 to 15 fritters.
