- 3/4 c. corn meal
- 1/4 c. plain flour
- 1/2 tsp. salt
- 1 Tbsp. sugar
- 1/2 c. milk
- 1 Tbsp. baking powder
- 1 egg
- 4 Tbsp. melted butter
Directions

1Sift corn meal, flour, salt, baking powder and sugar together. Beat egg.

2Add milk and butter.

3Add to sifted dry ingredients, stirring just enough to dampen all the dry ingredients.

4Fill greased muffin cups 2/3 full.

5Bake in a 425° oven for 25 minutes. Makes 6 to 8 muffins.
