- 1 stick oleo
- 1 medium onion, chopped
- 1/2 c. celery, chopped
- 1/2 c. green pepper, chopped
- 2 oz. sliced mushrooms
- 1/4 c. diced pimento
- 1/4 c. ripe olives
- 1 small box Minute rice
- 2 cans cream-style corn
- 2 eggs, beaten
- salt and pepper
- grated cheese
Directions

1Heat oven to 350°.

2Mix the corn, rice and eggs.

3Saute the first 7 ingredients until tender.

4Mix well.

5Bake in large casserole for 35 to 40 minutes.

6Top with grated cheese.

7Bake until cheese melts.
